Enchanted Autumn Harvest Bowl
Magnesium-packed. Soul-warming. Spookily satisfying.
🦴 Ingredients:
1 cup quinoa, cooked
½ avocado, sliced
¼ cup shallots, thin sliced
½ cup roasted pumpkin seeds (optional)
1 cup roasted sweet potatoes, cubed
1 cup sautéed spinach (or kale) (optional)
1 cup blood red cherry tomatoes (optional)
¼ cup black beans (rinsed)
2 tbsp tahini
Juice of ½ lemon
1 garlic clove, minced
Dash of smoked paprika
Salt & cracked pepper to taste
Optional: Sprinkle of edible dried rose petals for a bewitching finish 🌹✨

In a bowl, layer the cooked quinoa like the base of your spell.
Top with sweet potatoes, spinach, avocado, black beans, shallots, tomatoes and pumpkin seeds — arrange artfully like runes of nourishment.
In a small bowl, whisk the tahini, lemon juice, garlic, paprika, and a little warm water until smooth and drizzle-worthy.
Drizzle your enchanted dressing over the bowl and finish with a pinch of salt, pepper, and the dried petals if you dare.
