Enchanted Autumn Harvest Salad

Enchanted Autumn Harvest Bowl
Magnesium-packed. Soul-warming. Spookily satisfying.

🦴 Ingredients:

  • 1 cup quinoa, cooked

  • ½ avocado, sliced

  • ¼ cup shallots, thin sliced

  • ½ cup roasted pumpkin seeds (optional)

  • 1 cup roasted sweet potatoes, cubed

  • 1 cup sautéed spinach (or kale) (optional)

  • 1 cup blood red cherry tomatoes (optional)

  • ¼ cup black beans (rinsed)

  • 2 tbsp tahini

  • Juice of ½ lemon

  • 1 garlic clove, minced

  • Dash of smoked paprika

  • Salt & cracked pepper to taste

  • Optional: Sprinkle of edible dried rose petals for a bewitching finish 🌹✨

🧙‍♀️ Instructions:

  1. In a bowl, layer the cooked quinoa like the base of your spell.

  2. Top with sweet potatoes, spinach, avocado, black beans, shallots, tomatoes and pumpkin seeds — arrange artfully like runes of nourishment.

  3. In a small bowl, whisk the tahini, lemon juice, garlic, paprika, and a little warm water until smooth and drizzle-worthy.

  4. Drizzle your enchanted dressing over the bowl and finish with a pinch of salt, pepper, and the dried petals if you dare.
